Aunt Mer Lyn's Rhubarb Cake

My aunt gave me some recipes for rhubarb some years ago and this one has become a favorite.  It is FULL of sugar so if you are looking for a low sugar recipe this is not the one for you but it is tasty. 

Place 5 cups of cut up rhubarb in a 9X13 pan.  Pour 1 cup of sugar over rhubarb, followed by a 3 oz box of red jello powder (any flavor you like). Cover with 3 cups of mini marshmallows ( it has to be mini). 

Mix up a yellow cake mix following directions on the box.  Pour batter over the marshmallows, spreading to edges and bake at 350 for about 45 minutes.

Serve warm or cold, plain, with whipped cream or with vanilla ice-cream.
Super easy. Super yummy.



 The top of the cake will be bumpy and irregular. 












You can serve it cake side up,
                     


Or upside down for some pretty color.

But any way you serve it, it is yummy. Even my picky eater liked it.
